Air Fryer Blueberry & Orange Muffins
Ingredients
- Non-Stick Cooking Spray
- 1 cup self rising flour plus 1 tbsp
- 2½ tbsp white sugar
- ¼ cup unsweetened almond milk
- 1 ounce coconut oil melted
- ¼ cup unsweetened applesauce
- 1 tsp fresh orange zest finely grated
- 1 tbsp fresh orange juice
- ¼ tsp vanilla extract
- ¼ cup fresh blueberries
- ½ tsp orange zest grated
Instructions
- Grease6 muffin molds with cooking spray. Set aside.
- Ina medium-sized bowl, blend together flour and white sugar.
- In another large-sized bowl, add the remaining ingredients except for blueberries and orange zest and blend well.
- Now add in the flour mixture and mix until just blended.
- Fold in the blueberries and orange zest.
- Place the mixture into the prepared muffin molds evenly.
- Slide the Air Fryer Basket inside and adjust the temperature to 355 °F to preheat for 5 minutes.
- After preheating, arrange the muffin molds into the Air Fryer Basket in a single layer.
- Slide the basket into Air Fryer and set the time for 12 minutes.
- After cooking time is finished, remove the muffin molds from Air Fryer and place onto a cooling rack to cool for about 8-10 minutes.
- Then invert the muffins onto the cooling rack to cool completely before serving.
